Cauliflower Flan

Ingredients
- 1 hd cauliflower florets, cooked, dried, and pureed
- 2 ea eggs
- 1/3 C heavy cream
- 1/3 C whole milk
- 1/2 C parmesan cheese, grated
- 1/4 t nutmeg, ground
- 1/4 t cayenne pepper
Instructions
- Butter the bottom and sides of four 6-oz ramekins. Cover the bottoms with parchment paper cut to shape, then butter the parchment paper.
- Whisk together the eggs, cream, milk, cheese, salt, nutmeg and cayenne, then mix in the cauliflower puree.
- Pour the mixture into the ramekins, then place them in a baking pan. Fill the pan half-way up the sides of the ramekins with boiling water, and bake at 350 until set, about 35 minutes.
- Plate and serve.
