Cauliflower Flan

  1. Butter the bottom and sides of four 6-oz ramekins. Cover the bottoms with parchment paper cut to shape, then butter the parchment paper.
  2. Whisk together the eggs, cream, milk, cheese, salt, nutmeg and cayenne, then mix in the cauliflower puree.
  3. Pour the mixture into the ramekins, then place them in a baking pan. Fill the pan half-way up the sides of the ramekins with boiling water, and bake at 350 until set, about 35 minutes.
  4. Plate and serve.
